Recipe of the Day Crispy Half-Baked Spuds
1. Servings: 2
Ingredients 2 medium potatoes (about 2/3) pounds) 2 teaspoons melted butter or margarine 1 teaspoon lemon juice 2 tablespoons grated parmesan cheese pepper, to taste
Directions Cut potatoes in half lengthwise; brush cut surfaces with mixture of butter and lemon juice. Combine cheese and pepper; dip cut sides of potatoes into mixture to generously coat. Place cut sides down on well-greased baking sheet. Bake in 375-degree oven for 25 to 30 minutes, or until potatoes are tender. Alternate Baking Methods : 1. Add dried or chopped fresh herb of your choice to cheese mixture before coating potato. 2. Omit butter and lemon juice. Dip cut side of potato halves in prepared pizza sauce, then in parmesan cheese before baking. Makes 2 Servings

Potato salad. Boil cut up until almost soft. They are always on sale. Place in fridge to cool after draining. Take out, use a masher but leave some whole. Base additions: Mayo, sweet relish, mustard, and mix. Add other spices as you wish: horseradish, oregano, dry onion bits, paprika, garlic, Tony C's, or anything that may stir your fancy. Oh, be sure to stir all together, LOL! Place back in fridge to settle a bit more. PS leave the skins on, that is where the vitamins are the best!

Mac & Cheese!
To get cheesier M & C add some velveta or soft jar cheese.
